Easy Green Juice Recipe

Love a bright start to the day? This easy green juice is a go-to for when you crave a burst of freshness.

When we lived in Austin one of my favorite things was grabbing a green juice while I was running around town. With so much fresh flavor, it always made my day sunnier, no matter the weather or how I was feeling!

Green juice can be expensive to buy, but it’s so easy to make at home. You don’t even need a juicer!

Green apple works best not only for the tart flavor, but to keep the juice’s vibrant green color! Granny Smith apples are perfect here, but you can swap in any other crisp green apple.

For the cucumber, I recommend using a seedless variety like Persian or English cucumber. If your cucumber does have larger seeds, halve it down the middle and scoop out the seeds with a spoon.

There’s no need to peel either the cucumber or the apple.

How To Make Green Juice in a Blender

Step 1: Prep Ingredients

Chop and add all of the ingredients to a blender. A high-speed blender like Blendtec or Vitamix will work best here.

Step 2: Blend

Blend until completely smooth. If your blender has a tamping tool, you can use it to help blend every last bit.

Step 3: Strain

Set a fine-mesh sieve or cheesecloth over a bowl or liquid measuring cup. Pour in the blended juice. Press against the solids to extract as much juice as possible, but take care to not let any bits push through the sieve into the juice.

Tip: You can also strain through a nut bag and let the mixture rest, naturally separating, if you have time.

Step 4: Serve or chill

Serve immediately or pour into containers and store in the fridge until ready to drink. Make sure to shake before serving.

Storage tips

Fresh juices like these don’t last long, so only make as much as you can drink within a couple of days.

Store in glass bottles or other airtight containers like mason jars. 

Recipe tips

Save the remaining pulp to blend into smoothies! I like to freeze it in ice cube trays so I can use them later in the week.

Try this recipe with kale instead of spinach. Lacinato (dinosaur) kale works great! Note that it will taste a little more earthy, so you might want to add a second apple or a spoonful of honey.

Swap the cucumber for celery, or add a handful of fresh parsley for more herbal flavor.

FAQ

Yes! If using a juicer, omit the added water. You won’t need to strain after juicing.

Green juice is not overly sweet, but if you need extra sweetness, add another apple, or mix in your favorite sweetener. Liquid sweetener like honey, agave, or monk fruit drops works best. Add just a little at a time!

Ingredients

  • 1 cup fresh spinach, packed
  • 1 small cucumber, chopped
  • 1 green apple, chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon freshly grated ginger
  • ½ cup cold water

Instructions

  • Add spinach, cucumber, green apple, lemon juice, ginger, and water to a high-speed blender.
  • Blend on high for 45–60 seconds until completely smooth.
  • Strain through a fine mesh sieve or cheesecloth into a bowl, pressing firmly to extract as much liquid as possible.
  • Drink immediately, or pour into small glass bottles or jars.
  • Refrigerate and drink within 48 hours. Shake well before drinking.
