Ingredients
2cupsstrawberriessliced (frozen or fresh)
1/3cupcoconut sugaror any sugar of your choice
2tablespoonswater
2cupsalmond milkor other plant-based milk
1teaspoonpure vanilla extract
Instructions
In a small saucepan, combine the strawberries, sugar, and water. Cook over medium-low heat, stirring often, until the mixture thickens slightly (about 5 minutes).
2 cups strawberries, 1/3 cup coconut sugar, 2 tablespoons water
Place a fine-mesh strainer over a bowl. Pour the strawberry mixture into the strainer and use the back of a spoon to press the strawberries, extracting all the juices. Discard the solids.
In the bowl with the strawberry juice, whisk in the almond milk and vanilla extract until fully combined.
2 cups almond milk, 1 teaspoon pure vanilla extract
Serve immediately or chill until ready to enjoy.
