In a mixing bowl, combine instant coffee, sugar, cinnamon and boiling water.

Using an electric mixer or hand frother, whip on high speed. It will lighten in color and after 2 minutes it will be noticeably thicker. Continue to whip until stiff peaks form, about 5 minutes total.
If whisking by hand, it will take 15–20 minutes to reach stiff peaks.
For an iced coffee, fill a glass halfway with ice, then pour in milk. For a hot coffee, heat milk on the stove, in the microwave, or using the frothing arm of an espresso machine and pour into a mug.

Spoon the whipped coffee over the milk. Stir gently before drinking to mix while keeping the creamy texture.
