Tips and Variations

- Make it vegetarian: Swap the bacon for sautéed veggies.
- Add veggies: Chop up some bell peppers, mushrooms, onions, or fresh spinach to boost the nutritional value.
- Cheese swaps: Try pepper jack, Monterey Jack, mozzarella, feta, or parmesan cheese for a new twist.

- Low-fat: Use low or fat-free cottage cheese, egg whites, and turkey bacon for low-fat egg bites.
- Smooth texture: If you don’t like the chunkiness of cottage cheese, you can whip it in a food processor or blender.
- Spices: I kept the egg bites simple with salt and pepper, but you could add garlic powder or onion powder for extra flavor.
- Don’t overbake: You want the egg bites to be set and lightly golden on the edges, or else they may dry out. Every oven is different, so subtract a few minutes from the baking time just in case.
