  • 7 eggs large
  • 3/4 cup bacon bits cooked
  • 1 cup cottage cheese
  • 1 cup Colby Jack cheese shredded
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

Preheat Oven

  • Set the oven to 325°F (163°C).

Prepare the Egg Mixture

  • In a medium-sized mixing bowl, whisk the eggs until smooth.

Bake

  • Place the muffin pan on the upper rack of the oven.
  • Bake for 23–25 minutes, or until a toothpick inserted into the center of an egg bite comes out clean and the edges of the egg bites slightly turn golden brown.

Cool and Serve

  • Let the egg bites cool for a few minutes before carefully removing them from the muffin pan. Remove them while still warm to prevent sticking.
