These easy Cottage Cheese Egg Bites are the perfect high-protein breakfast for busy mornings! Loaded with simple ingredients like eggs, creamy cottage cheese, and crispy bacon bits, these egg bites are an easy way to dress up basic eggs. With just 30 minutes from start to finish, you'll have a batch of fluffy, cheesy bites that work for breakfast, a snack, or even a quick on-the-go lunch!
In a medium-sized mixing bowl, whisk the eggs until smooth.

Add cooked bacon bits, cottage cheese, shredded cheddar cheese, salt, and black pepper. Whisk everything until well combined.

Prepare the Muffin Pan
Spray a 24-cup mini muffin pan with cooking oil to prevent sticking.

Pour the egg mixture into a large measuring cup with a pour spout. Evenly distribute the egg mixture among the 24 mini muffin cups. Note* I suggest stiring the egg mixture a few times while pouring so the ingredients are evenly distributed.
Bake
Place the muffin pan on the upper rack of the oven.
Bake for 23–25 minutes, or until a toothpick inserted into the center of an egg bite comes out clean and the edges of the egg bites slightly turn golden brown.
Cool and Serve
Let the egg bites cool for a few minutes before carefully removing them from the muffin pan. Remove them while still warm to prevent sticking.
Notes
Tips and Variations
Bacon: Swap the bacon for diced ham, prosciutto, or crumbled breakfast sausage for a slightly different flavor. If you do swap another type of meat, it needs to be completely cooked before adding it to the egg bites!
Make it vegetarian: Swap the bacon for sautéed veggies.
Add veggies: Chop up some bell peppers, mushrooms, onions, or fresh spinach to boost the nutritional value.
Cheese swaps: Try pepper jack, Monterey Jack, mozzarella, feta, or parmesan cheese for a new twist.
Kick of heat: Add some red pepper flakes to the egg mixture or a dash of hot sauce on top for some extra heat.
Low-fat: Use low or fat-free cottage cheese, egg whites, and turkey bacon for low-fat egg bites.
Smooth texture: If you don't like the chunkiness of cottage cheese, you can whip it in a food processor or blender.
Spices: I kept the egg bites simple with salt and pepper, but you could add garlic powder or onion powder for extra flavor.
Don't overbake: You want the egg bites to be set and lightly golden on the edges, or else they may dry out. Every oven is different, so subtract a few minutes from the baking time just in case.
Make a double batch: You can double the recipe for meal prep or hungry grandkids, in my case!
