Ingredients

Instructions
Set your oven to 350°F (175°C). Spray a 24-cup mini muffin tin generously with non-stick cooking spray.
In a blender, combine eggs, cottage cheese, whipping cream,salt, and pepper. Blend until smooth.

1 cup cottage cheese,
1/4 teaspoon salt,
1/4 teaspoon pepper,
1 tablespoon whipping cream
Pour the egg mixture into a small pitcher with a spout for easy pouring.
Divide the shredded Gruyere cheese evenly, placing it in the bottom of each muffin pan cup.

Pour the egg mixture evenly among the muffin cups, filling each about 2/3 full to leave room for the eggs to rise.
Sprinkle chopped bacon on top of each egg bite. Press the bacon lightly into the egg mixture with a spoon.

Bake in the oven for 20–25 minutes, or until the egg bites are set and slightly golden.
Let the egg bites rest in the pan for 5–10 minutes. Use a spoon to gently remove them, and serve warm.
Notes
Tips and Variations
Cheese Swaps:
Replace Gruyere with sharp cheddar, Monterey Jack, or pepper jack for a new flavor twist.
Protein Options:
Use cooked sausage crumbles or diced ham in place of bacon.
Vegetarian Version:
Skip the bacon and add finely chopped cooked veggies like spinach, bell peppers, or mushrooms for a veggie-packed bite.
